After gathering recipes, some dating back hundreds of years, and touring Italy to assure authenticity, we have developed an ALL NATURAL, perfectly balanced blend of herbs and spices. Our seasoning is ideal for meats, poultry, fish, seafood, soups, salad dressing or bread dipping sauce. Our seasoning can also be used as a marinade, dry rub or seasoning base for any meal. Each herb and spice used in our seasoning blend must undergo rigid laboratory testing to insure purity. Any ingredient which exhibits the presence of chemicals and/or extraneous material is rejected. Each ingredient must earn a Certificate of Analysis and a Guarantee of Quality before being considered. Unlike other Italian seasonings which use exclusively freeze dried ingredients, DiFiore Authentic Italian Seasoning® uses primarily ground ingredients.
Ground ingredients retain their natural flavor and rehydrate to a more natural taste. Our reasoning has a 6.4% moisture content vs virtually 0% for freeze dried seasoning. Our ground ingredients produce a seasoning that is 3.16 times the density of typical Italian seasoning. This makes our seasoning extremely economical to use. Our seasoning contains ALL NATURAL garlic, onion, fennel, basil, oregano and sage. In keeping with Italian custom dating back to the 4th century BC, our seasoning also contains a very small amount of sweetener. The sweetener takes the "edge" off of some ingredients which the taste buds detect as slightly bitter. Our choice for a sweetener is evaporated cane juice. This product is produced in a time honored fashion at a Certified Carbon Neutral plantation. The juice is squeezed from the cane, washed, filtered and allowed to crystallize. There is no chemical process involved. The typical portion of seasoning contains approximately 0.029 grams of sweetener. This compares to approximately 3 grams of sugar in a .2oz strawberry, 9.9 grams of sugar in a 6" banana and 23 grams of sugar in a large apple.
Difiore Authentic Italian Seasoning® contains: NO sodium, NO MSG, NO gluten NO lactose, NO chemicals, NO emulsifiers, NO extenders, NO fillers, NO anti-caking agents. Once all ingredients have received their Certificate of Analysis and Guarantee, they are mixed in sterilized blenders in an FDA and AIB Certified facility which is also HACCP Certified for cleanliness. The final blend must also earn a Certificate of Analysis and Guarantee of Quality. Our packaging is made by a leading maker of flexible packaging for the medical, pharmaceutical and diagnostic industry in a facility which is ISO9001 Certified for Quality. We use a 4 layer pouch which exceeds all food safety standards as an air barrier, gas barrier and for puncture resistance. Packaging is done on sterilized equipment in an FDA and AIB Certified Clean Room.
